Sometimes I just need something small to satisfy my sweet tooth (usually after dinner). These definitely do the job. They are so rich and satisfying I only need one or two to scratch my itch for something sweet. They are also on the healthy side so there is no reason to feel guilty.

1/2 cup coconut oil (just melted)
1/2 cacao powder (you can use cocoa powder but not as healthy)
1/2 almond butter
1/4 cup real maple syrup
1/4 tsp real vanilla extract
Pour melted coconut oil in blender along with remaining ingredients. Blend together and then pour into silicone or paper muffin cups. Makes about 12 thinner pucks or 10 thick ones. Put in freezer for about 10 mins to chill. Pop out of muffin cups and store in a air tight container (I like a ziploc bag). Store in the freezer or fridge. I like the freezer because they do melt quickly when removed, especially with the heat of your hands; so having them a bit colder makes them easier to eat. You can still easily bite into them even when they are frozen. Enjoy the healthy chocolate fudge!
